My recipe for crinkles : English chocolate cakes

I came across a recipe for these little cakes but it was full of errors and mistakes, as well as having an excessive amount of sugar (150 g / 5,29 oz !). So here's my own version of these delicious Anglo-Saxon cupcakes, with a light flavour and an incredibly moist texture ! All my friends and family love them, so what are you waiting for ?

Ingredients

  • 205 g / 7,23 oz chocolate
  • 50 g / 1,76 oz butter
  • 2 eggs
  • 50 g sugar (preferably brown sugar)
  • 1 teaspoon vanilla flavouring
  • 1/2 teaspoon baking powder
  • 190 g / 6,70 oz flour
  • 1 pinch of salt
  • Icing sugar

Preparation

Melt the chocolate with the butter in a water bath, stirring well until the mixture is shiny and completely melted.

In a separate bowl, mix the sugar and eggs until the mixture whitens, then add to the melted chocolate / butter mixture and stir.

Add the flour, baking powder and salt and mix well. Place the dough in the fridge for 2 hours to harden (this will make it easier to make balls later).

After 2 hours, preheat the oven to 180°C / 356°F, remove the dough from the fridge and shape into small balls, then roll them in icing sugar. Place them on a baking tray lined with greaseproof paper (or a Silpat baking sheet) and bake for around ten minutes.

The crinkles are ready once they crack, but don't put them in the oven for more than 12 minutes to prevent them from becoming too hard. I've added icing sugar to make them prettier for the photos, but there's no need to. Enjoy your meal !

Vegan chocolate mousse with aquafaba
Chocolate mousse is a quick and easy dessert to make. There are many variations: with whipped cream, mascarpone, just eggs... However, they are not suitable for all diets. This vegan version is ideal for people who are lactose intolerant, vegan or even allergic to eggs! I was blown away by the striking resemblance, both in texture and taste, with a classic chocolate mousse.
