Eplekake : Norwegian apple cake

This apple cake is a delight to enjoy with a cup of coffee. Ideal for a special occasion, during Fika, or simply as a snack. It won over my in-laws unanimously with its enchanting cinnamon flavour and the crunch of the almond and sugar topping, adding an exquisite touch to every bite.
Ingredients​
  • 150 g / 5.29 oz flour​
  • 60 g / 2.12 oz brown sugar (+ for the top)​
  • 150 g / 5.29 oz butter​
  • 100 ml / 3.38 fl oz fermented milk​
  • 5 to 7 apples (depending on size)​
  • 3 eggs​
  • 1 sachet baking powder​
  • 1 teaspoon cinnamon​
  • 1 teaspoon cardamom​
  • Slivered almonds​
  • Unrefined cane sugar (optional)


Preparation​


​Peel the apples and cut into small cubes. Preheat the oven to 180°C / 350°F. Melt the butter in a saucepan or in the microwave.


​Place the flour, sugar, eggs, milk, baking powder, cinnamon and cardamom in the bowl. Add the melted butter. Mix until smooth. Add the apple cubes and mix gently with a pastry blender until they are evenly distributed in the dough.


​Butter and flour a 22 cm diameter cake tin. Sprinkle generously with flaked almonds and dust with sugar (brown sugar & unrefined cane sugar).


​Place in the oven for around 45 minutes, checking with the blade of a knife that the cake comes out clean when cooked. Leave to cool completely before unmoulding and serving.

Vafler : must-have Norwegian waffles with cardamom
Norwegians are passionate about waffles. Their waffles are delicately thin and incredibly moist, a far cry from the versions usually found at funfairs. Another speciality ? Cardamom ! The Scandinavians are crazy about it, and it is said that the Vikings brought the spice back from Constantinople (although this legend is open to debate). They are traditionally eaten with fresh cream (Norwegian cream is more acidic than ours) and strawberry jam, or with brunost (a traditional Norwegian brown cheese with a caramelised flavour).
